Added SEQ sink but commented it out due to license terms. Resolved problem that prevented contents of Request.Body from printing. Minor updates to logged messages

I've resolved earlier logging problem related to rendering Request.Body in middleware.
There seems to be a conflict related to different versions of serilog.Enrichers.Environment. I wasn't able to resolve it but removing it has not affected the log output.
