This pull request dynamically sets the MinimumOSVersion in App.framework/Info.plist during the build process. This is achieved by removing the hardcoded version from template files and adding a build step that uses plutil to set the correct version from FlutterDarwinPlatform.ios.deploymentTarget(). The tests have been updated to reflect this new step. My feedback includes a suggestion to improve error logging for better debuggability and a refactoring suggestion in the tests to reduce code duplication.

Like I mentioned offline, you'll need to do a migration. Looks like we already have one that migrates the App framework Info.plist, so we likely need to change this from updating the MinimumOSVersion to instead removing it:

Currently, the MinimumOSVersion in App.framework/Info.plist is sourced from a static template file created during flutter create. This value can become out of sync with the -miphoneos-version-min flag used to compile the App.framework binary, especially after a Flutter SDK upgrade. This mismatch can lead to App Store submission warnings or rejections. This change fixes the issue by making the build process the single source of truth for the MinimumOSVersion.
