`os_str_bytes` 6.3.0 ends up removing checked conversions by default, so switching to `bstr`. The `bstr` APIs end up being more convenient to use in practice anyways.
We've been previously representing mixed checkout targets (which could be either an OID or a reference) with plain strings. This type makes it clearer what the logical type of the checkout target is.
