Describe the enhancement requested

Node.js 18 will reach EOL on 2025-04-30 based on https://github.com/nodejs/release#release-schedule information.

We're using Node.js 18 in some CI jobs such as https://github.com/apache/arrow/blob/ba6bd5abf20abe2e0ea3d05ec857ffaf13bfeff4/.github/workflows/js.yml#L96

@trxcllnt @domoritz Can we use Node.js 20 or later?
