Currently, we use the (very, very) outdated stable/postgres chart, I see two options:

1. Use the descendant of stable/postgres which lives on bitnami/charts:postgresql
2. Create our own Postgress YAML, and include it directly in the chart

PS: I am in favour of making our own YAML, but this might be a lot of effort for no reason

PSS: if we make our own YAML, it will likely require a breaking change (new major version of the chart). However, it might be possible to take over the existing data PVC
