Thank you a lot for catching and fixing this!

I think we did not caught this because on the initial version we had:

	useBlockProps,
	addSaveProps,
	attributeKeys: [ 'fitText' ],
	hasSupport: hasFitTextSupport,
	edit: FitTextControl,
};

So useBlockProps and consequently useFitText would only load if fitText attribute was there. Recently we changed because we started to depend on fontSize and style too which caused to hook to run on unexpected situations and caused the issue, it was a more recent change. But still ideally during the addition of keys we could have caugh this, I'm glad it was caught. I guess it should be part of beta if it is not already.

I just cherry-picked this PR to the wp/6.9 branch to get it included in the next release: 1383085
