  5. Update kotest to 6.1.4, address API changes 

    - The SpecFilter we used to filter tests based on Java Version is removed, I replaced with a SpecExtension that achieves the same without reflection.
- @AutoScan doesn't exist, we must register extensions explicitly.
- Kotest now requires java 11 so the gradle configuration was updated to compile to 8 on base, but on 11 for tests.
- Update the Matcher for the new API.
