A former hotel manager and tourism industry consultant, Professor Kaye Chon is Dean, Chair Professor, and Walter and Wendy Kwok Family Foundation Professor in International Hospitality Management of the School of Hotel and Tourism Management at The Hong Kong Polytechnic University. Dean Chon previously held academic positions at the University of Houston, University of Nevada, Las Vegas, and Virginia Tech in the US. Under Dean Chon’s leadership, the School has arisen as one of the world’s leading institutions in hospitality and tourism management. The School has been ranked No. 1 in the world for five years in a row in the “Hospitality and Tourism Management” category according to in the Global Ranking of Academic Subjects.A frequent speaker at international conferences, Dean Chon has published over 200 papers in international journals and professional publications and has authored or edited 12 books. One of his co-authored books, Welcome to Hospitality has been adopted as a textbook in more than 100 hospitality education programmes world-wide. He is currently the Editor-in-Chief of the Journal of Travel

Over 1500 articles appearing in the 1988 issues of eight different academic and trade publications on the travel and tourism trade were content analyzed in order to monitor the environmental factors which affect the tourism industry. Purpose Draws from the equity theory and customer equity literature, this study aims to argue tha... more Purpose Draws from the equity theory and customer equity literature, this study aims to argue that the implementation of contactless service as an innovative service design in the hospitality industry can generate customers’ emotional attachment and cognitive evaluation of the brand. Design/methodology/approach This study uses partial least squares modeling and data from a large-scale survey of hotel guests who have experienced contactless service in mainland China. The authors performed an importance-performance map analysis to evaluate the significance of critical variables and constructs by including the performance dimension. Findings Customer equity is a three-dimensional higher-order construct that embraces value-, brand- and relationship equity. A pleasant experience of contactless service in hospitality encounters generates a positive effect on customer equity and delight. Numerous hotel projects are already under way and many more are planned. However, problems with financing, bureaucracy, government regulation of labor and land ownership, and a lack of tourism infrastructure remain a hindrance to foreign investment. Moreover, the former U.S. economic embargo has until recently hampered the involvement of U.S. companies in Vietnam's development.

This research note seeks to outline fundamental thinking in the philosophy of education which mig... more This research note seeks to outline fundamental thinking in the philosophy of education which might inform further analysis of tourism and hospitality curriculum design. There is not a single compelling meaning for the term curriculum. It has been variously defined as a set of educational plans, learners' experiences, a field of study, and subject matter/content (Cooper, 2002; Ratcliff, 1997). In all of these accounts, the underlying view is that curriculum strongly affects students, educators, and members of society (Ornstein & Hunkins, 2009; Zais, 1976). Tribe (2015) contends that curriculum decision making is based on what he called 12Ps such as power, pals, precedent, pragmatism and parochialism to name just a few factors, thus, "curriculum can at worst be accidental, path-dependent, ill-informed and merely adequate" (p. 18). Despite the extensive points raised in this list, it can be maintained that the contribution of philosophical enquiry remains underutilized, even overlooked in curriculum design (Ornstein & Hunkins, 2009). Our discussion positions philosophical concerns at the heart of curriculum development. Philosophical considerations provide frameworks for an institution's aims and goals, subjects to be taught, teaching and learning experiences, and assessment methods (Ornstein & Hunkins, 2009; Tribe, 2015).

The importance of tourism in enhancing economic welfare has been recognized in many developing co... more The importance of tourism in enhancing economic welfare has been recognized in many developing countries. The revenue generated from tourist arrival is beneficial in improving the quality of life and living standard of the local community. Tourism also contributes to a job creation, foreign exchange earnings, and cultural and social exchanges (Chaisawat, 2005; Chon & Maier, 2010; Dredge et al., 2012; Howell & Uysal, 1987). Indonesia Statistics Bureau (n.d.) and World Tourism Organization (2014) indicated that the number of tourist arrivals to Indonesia has been increasing in the last nine years. The ranking of Indonesia according to Travel and Tourism Competitiveness Report was also improving from rank 74 in 2011 to 70 in 2013 (World Economic Forum, 2013). Based on the report, Indonesia excelled in the natural resources (ranked 6). Indonesia is on the top position in this category among the other ASEAN countries. However, the rank was relatively low in human resources category with the score 61 (77 for qualified labour availability and 57 for education and training). In comparison with its neighboring countries (Singapore, Malaysia, and Thailand), Indonesia's tourism competitiveness is still far behind. Those three countries ranked 10, 34, and 43 respectively. The capability of tourism labour has put Singapore as the world's top ten (World Economic Forum, 2013). Thus, it can be presumed that manpower plays significant roles in the development of tourism in a country or region. Indubitably Indonesia needs to pay attention for human resources development to ensure a long-term tourism sustainability (Andriani, 2014; Hernasari, 2014)

This chapter explores the development of a distinctive curriculum framework for the hospitality a... more This chapter explores the development of a distinctive curriculum framework for the hospitality and tourism bachelor degree programmes within Indonesia’s higher education system. The framework considered and built in this study stresses reflection and action concepts based on integrating established educational philosophies. Semi-structured/in-depth interviews with key educational stakeholders informed the application and development of these ideas in the Indonesian context. Although some similar elements may appear in the curricula of both programmes, by differentiating the underpinning educational philosophies – which in turn lead to separate aims and objectives, content, learning and instruction and assessment – the differences between the academic and vocational bachelor degrees can be articulated.

ABSTRACT This study investigates the forces shaping curriculum design of hospitality and tourism ... more ABSTRACT This study investigates the forces shaping curriculum design of hospitality and tourism undergraduate programs in Southeast and East Asia. The topic has received little attention in the past. In-depth semi-structured interviews were conducted with 11 hospitality and tourism program directors from 8 regions in Southeast Asia (Indonesia, Malaysia, Thailand, the Philippines) and East Asia (China, Hong Kong, Macao, South Korea). The results indicated that the industry as one major stakeholder has strong influences on curriculum in multiple ways. This can be seen in the way industry commentary shapes the objectives of the programs, graduate competencies, and the subject material favoring employability for the hospitality and tourism industry. Accreditation was viewed as more essential in designing a curriculum for the higher institutions in the Southeast Asia compared to East Asia. The availability and expertise of staff were viewed as the least important forces in shaping the curriculum.

Its complex informational structure is generally inaccessible to tourists, whose purchase behavior might be affected by the extent to which they can access such information. This study shows that package tours can result in low tourist satisfaction and deter tourists’ behavioral intention over time despite the fact that package tours are financially advantageous. An analysis of data based on China’s outbound tourism demand in Hong Kong from 1993 to 2013 shows that tourist satisfaction can be explained by the market share of inclusive package tours. This suggests that the decline in the market share of package tours leads to an increase in tourist satisfaction. As the amount of information in the market increases as a result of accumulated travel experience, package tours are replaced by independent tours or entirely new packages, or by travel to a new destination.

Asianness in Hospitality: The Case of Luxury Hotels in Bangkok, Thailand

This paper aims to explore the extent to which two Asian and two non-Asian luxury hotel brands op... more This paper aims to explore the extent to which two Asian and two non-Asian luxury hotel brands operating in the business district of Bangkok, Thailand, incorporate ‘Asianness’ into their designs and their operations as part of signaling luxury. As a specific approach to design and service provision in the luxury segment of the hotel sector, Asianness relies on particular traits of Asian culture such as sincerity, love, forgiveness, balance, and attention to small details. Various qualitative research techniques were used to collect data: interviews with managers from the four hotel brands, observation at these hotels, documentation (their official websites, and netnography (an analysis of reviews on TripAdvisor). Findings indicate that the four hoteliers incorporate Asianness in various degrees and various ways in the design and style of their hotels as well as in their customized services and in the customer-centricity of their approach to luxury. The level of Asianness (and “Thainess” in one case) is more consistent in the case of Asian luxury brands. Different characteristics of Asianness are nonetheless found across the four hotel brands.
