Butternut Squash, Chick Pea and Spinach Madras |

Soften one diced onion and two crushed cloves of garlic using a little oil. Stir through a heaped desert spoon of madras curry paste and then add one butternut squash (large dice) and a can of chick peas (drained). Stir well to coat all the ingredients with the paste. Add a can of chopped tomatoes and a can and a half of water. Simmer covered for twenty minutes, stirring occasionally. Check to see whether the squash is cooked. Add a bag of spinach and stir through, allowing it to wilt. Season to taste.
Serves 4
I haven't worked out the points very accurately as yet but I think it'll work out between 8 and 10 points. This could be reduced by using light spray oil and dry curry powder instead of the paste.

my brother in law is having gall bladder issues, he's been told he has to go on a gall bladder diet. My sister is at a loss of what to make with such limited food choices available. I was wondering if anyone here has any suggestions?

Can anyone tell me of any WW friendly recipes that I can use up cottage cheese with? I somehow have obtained a tub of it.. and quite honestly, can't stand the stuff on it's own. Anyone have any ideas?

I made this tonight from the WW magazine and it was tasty!!
Chicken and Pasta Alfredo Serves 6, 6pts (serving is about 1 ¼ cups)
¾ lb Whole wheat fusilli ¾ lb boneless, skinless chicken breasts ¾ teaspoon salt ¼ teaspoon pepper 1 cup fat free half and half ½ cup fat free milk 2 tablespoons flour 1/8 teaspoon nutmeg 2 tablespoons butter 2 garlc cloves minced ¼ cup parmesan/romano cheese 2 tablespoons chopped fresh parsley
1. Cook pasta according to the package 2. Sprinkle the chicken with ¼ teaspoon salt and 1/8 teaspoon pepper. Spray a pan with like Pam and set over med-high heat. Add the chicken and cook until cooked all the way through (5-6 min). Transfer to a cutting board and let cook before cutting into bite sized pieces 3. Combine the half and half, milk, flour, nutmeg and the remaining salt and peppers into a small bowl and whisk until blended. 4. Melt the butter in a pan and then add the garlic and cook until just golden (1 min). Whisk in the half and half mixture and stir constantly for 2-3 mins until it bubbles and thickens. Next add the chicken, pasta, and cheese. Stir until heated and then serve.
I also added in zucchini but that is because I wanted more veggies.

I'm looking for a good dessert recipe that I can make tonight.
My fiance's family is coming over and they are very picky eaters, well as far as dessert goes. But I want to try to stay on track with my points and still be able to indulge in dessert.
If you guys have any good recipes that could fool a "non-weightwatcher", I would be very appreciative.
Also, I know I've heard of a chocolate cake recipe using pumpkin.. anyone have that recipe?

Flatout Herb Roasted Veggie Pizza 1 serving 6 points
1 light Italian herb Flatout (I used light sun dried tomato) 1/2 C chopped artichokes 1/4 C red onion sliced 1/4 C mushrooms, sliced 1/4 C red bell pepper, sliced 1 clove garlic, minced black pepper olive oil cooking spray (i used regular) 1 tsp. olive oil 1/2 tsp. Mrs. Dash Garlic and Herb seasoning 3/4 C low-fat shredded mozzarella cheese I also added 1/4 C diced tomatoes
Preheat oven to 400* In a small bowl mix olive oil and mrs. dash; set aside. In a separate bowl mix all the veggies and garlic. spread the veggies out on a baking sheet. Lightly spray with cooking spray and top with pepper. Bake 11-17 minutes until veggies begin to carmalize. Remove from oven and lower temp to 350* Spread veggies evenly over Flatout bread. Drizzle with the olive oil/ mrs dash mixture and then top with the cheese. Bake 7-8 minutes until cheese is melted.
the entire piece has 280 calories, 13.9 g fat, 13g dietary fiber Total of 6 points.
I found the Flat Out bread I think in the deli dept. of my local grocery store. It's in the area where they have the flavored wraps and flat breads.

Corn Dog Casserole

Ingredients
2 c celery, sliced 1 c onions, chopped 1 1/2 lbs fat-free hot dogs 2 whole eggs 1 1/2 c fat-free milk 1tsp sage 1/4 tsp black pepper 18 ozs cornbread mix 8 ozs low-fat cheddar cheese, shredded
Procedure
Preheat oven to 400. Prepare a 3-quart dish with cooking spray; set aside. In a skillet, cook celery and onions until tender. Place in a mixing bowl; set aside. Cut hot dogs into quarters, then into thirds. Place in a skillet, cook until lightly browned. Fold into celery mixture; set aside. Reserve one cup mixture. In another mixing bowl, combine eggs, milk, sage, and black pepper. Fold in hot dog mixture. Stir in cornbread mixes. Add one and half cups cheese. Spread mixture into prepared dish. Top with reserved hot dog mixture and cheese. Bake, uncovered for 30 minutes, or until golden brown.

Here's the Shrimp Creole recipe I made with my sister this past weekend while visiting Mobile Alabama.
Shrimp Creole 6 servings 8 points a serving
2 ---14 1/2 oz Cans Stewed tomatoes un-drained---CHOPPED 1/4 cup Green Bell Pepper--CHOPPED 1/4 cup Red Bell Pepper--CHOPPED 1 small yellow onion chopped--CHOPPED SMALL 2 medium ribs of celery chopped---CHOPPED SMALL 2 tsp Olive Oil 1 Garlic Clove Minced 2 TSP Tiger Sauce 1 TSP Emerils Bayou Blast 1 1/2 pounds of Shrimp Medium size raw---PEELED BOILED SHRIMP BOIL 4 cups of Minute rice
saute onions,bell peppers, celery, garlic, in olive oil in pan until soft. after these are cooked add stewed tomatoes and bring to a low boil.
You can boil shrimp with liquid shrimp/crab boil and add to the above mixture. be careful to not over cook. I would leave them almost raw drain them and then add to the above mixture to let them cook the rest of the way....that way they are not tough and chewy.
Cook the Minute Rice and add to mixture as a filler in each serving bowl.
This recipe only takes a few minutes to make....its excellent and you can add more Tiger sauce and Bayou Blast if you like spicy. I had never tried Tiger sauce but I love it now and intend to cook with it more in the future.

Sunday Night I made a great fish dinner. Talapia with Tony Chachere's Creole Seasoning and baked in the oven half way thru cooking I put I can't believe its butter liquid on it and some lemon juice here and there....it was fantastic.....I was truly shocked. very easy to cook, quick. My husband loved it. Im going to buy the big box of Talapia next time I go to Wal-mart. the best part is ....its low in calorie and fat!!!! I can't believe theirs something out there I really like that's low in cal/& fat!!!!

Right now I'm eating this:
Romaine lettuce covered with 1/2c kidney beans, 1/4c lite colby jack cheese, red onions, cilantro, tomato salsa, tomatillo salsa, 2.75 oz. of grilled/shredded chicken.
WW points: lettuce (0); beans (1); lite cheese (1); onions, cilantro, salsa (0); chicken (3) = 5!!
It's pretty amazing, too.

Not sure about anyone else in here, but before WW, I was addicted to the Panera Bread Pumpkin muffins & muffies. I thought I would die without them this fall. That was until I found this recipe and tried it. This is absolutely delicious and tastes JUST LIKE the Panera Bread version. I highly recommend this to all. WW Online? Recipe Builder Question |

Is anyone doing WW online? I have a question about the recipe builder. I entered a recipe through the builder and it's telling me it's 8 points per serving and when I break down and then add the ingredients myself, it's coming up 3.5 per serving! That's a huge difference. Does anyone know what the deal is?
Oh, and it's Squash & Corn Soup in case you were wondering.

I need help. Every night I am at a loss for what to do for dinner. I don't really like to cook. I like simple, easy, few ingredients meals. Like Cola Chicken, 3 ingredients and 1 pot. I can do that!
So please, any recipe that you may have that is simple, easy and not too many ingredients, send them my way now!!!!!

So I ended up using the FF yogurt. I think it will be fine, after I added everything else. One problem though, that I'm hoping will solve itself overnight as it all sits together in the bowl. The recipe called for lemon zest, and well, I think I shouldn't have used as much as it called for. This was my fist time working with it and it left a strong taste. But, like I said, hopefully it won't be as strong tomorrow after it all settles together. Wish me luck, and thank you for your helpful hints. :)
