Drain and set aside.<\/li>\n<\/ul>\n<p><strong>Combine:<\/strong><\/p>\n<ul>\n<li>1 package (2 \u00bc t yeast)<\/li>\n<li>\u2153 c white sugar<\/li>\n<li>\u00be c warm milk<\/li>\n<li>\u00be c warm water<\/li>\n<li>1 c all purpose flour<\/li>\n<li>Mix until sugar dissolves. Let sit about 5-10 minutes or until starting to foam<\/li>\n<\/ul>\n<p><strong>Add:<\/strong><\/p>\n<ul>\n<li>\u2153 c soft butter<\/li>\n<li>1 large egg<\/li>\n<li>1 \u00bd T kosher salt<\/li>\n<li>1 t cinnamon<\/li>\n<li>\u00bd t ground nutmeg<\/li>\n<li>\u00bd t ground ginger<\/li>\n<li>3 additional cups all purpose flour<\/li>\n<\/ul>\n<ol>\n<li>Mix thoroughly. Knead until elastic.<\/li>\n<li>Add currants, and knead a couple more times until well incorporated.<\/li>\n<li>Form dough into a ball. Cover, and let rise until double, about an hour.<\/li>\n<li>Punch down, and divide into balls about 2 \u00bd inches in diameter. Flatten each ball into a disk.<\/li>\n<li>Place in the center of each disk\u00a01 whole marshmallow (not miniature).<\/li>\n<li>Wrap dough tightly around marshmallow and seal well, using wet fingers if necessary.<\/li>\n<li>Line a rimmed baking sheet with parchment paper. (The rim and the parchment are both 100% necessary. Trust me. No really, trust me.)<\/li>\n<li>Place rolls on parchment, about 2 in. apart and cover with a lint-free towel. Let rise for another 20 min.<\/li>\n<li>Brush tops of rolls with 1 beaten egg.<\/li>\n<li><strong>Bake at 400\u00b0 F for 15 minutes.<\/strong><\/li>\n<li>Remove from oven and cool.<\/li>\n<\/ol>\n<p><i>You\u2019ll notice that, despite your best efforts to seal the marshmallow inside the dough, the marshmallows have broken through the sides and oozed all over your pan. Embrace the sticky mess.\u00a0<\/i><\/p>\n<p>When cool, peel the sticky rolls off the parchment and line them up next to each other in neat little rows.<\/p>\n<p><b>For icing, mix thoroughly:<\/b><\/p>\n<p>\u00bd lb powdered sugar<\/p>\n<p>A few T milk or lemon juice or both<\/p>\n<p>1 t vanilla<\/p>\n<p>Icing should be a smooth, spreadable consistency. (Like creamy peanut butter on a warm day.)<\/p>\n<p>Use a piping bag to ice the rolls in the shape of a cross. This is easiest if they\u2019re lined up in rows, so you can ice them in straight lines across multiple rolls at once.<\/p>\n<p>If you don\u2019t have a piping bag, just fill a ziploc with icing, cut off one corner, seal the bag, and squeeze the icing gently across the rolls from the cut corner.<\/p>\n<p>Let the icing set completely before covering. Or skip the wait and just eat them while they\u2019re fresh!
